Shirako is the counterpart of mako, the roe sac; it is white and soft, stays tender when cooked, and is best in winter. Pacific cod milt is large and intricately folded, also called kikuko (“chrysanthemum child”), and was once relished as kumowata (“cloud guts”) or kikuwata. Eating milt is almost unknown abroad; normally the roe-bearing female fetches more in spawning season, but in Japan the male Pacific cod is worth more for its milt, some of it flown in from Alaska. In pufferfish cuisine, fugu milt is rated the finest for its fluffy texture and sweetness.
